Preserving ‘Satay Lilit’ as Our Local Dish for Generation Connecting Activities : A CSII Project

A great nation will never come out of its cultural heritage. Preserving local dishes will be an action to enhance our culture so that it remains sustainable even in the era of globalization. In  Bali, there are many  traditional foods that are made by seniors to be served together. One of the famous Balinese dish which we  we are going to share today is called Satay Lilit. We managed to get the authentic family recipe from the elderly. We will try and share with them to see if they are happy with the result.

 

The recipe.

Before Grilling

We need to prepare some cooking ingredients such as dough for satay lilit which will need several ingredients for a dose of 15 servings as follows:

  •     1500 grams of ground mackerel fish meat
  •     900 grams of ground shrimp
  •     450 grams of grated coconut
  •     150 millimetre thick
  •     15 pieces of lime leaves kaffir lime, remove the bones, finely chop
  •     6 teaspoons of salt
  •     9 teaspoons of sugar
  •     9 tablespoons of cooking oil for sautéing
  •     Lemongrass stalks to taste 

In addition, along with ground spices we will need :

  •     36 cloves of red onion
  •     30 cloves of garlic
  •     15 pieces of red chillies
  •     3 red tomatoes
  •     15 grains of candlenut
  •     15 centimeters turmeric
  •     15 centimeters galangal
  •     6 centimeters ginger
  •     3 teaspoons coriander powder
  •     3 teaspoons tamarind
  •     3 teaspoons fried shrimp paste
  •     3 lemongrass stalks, take the white, finely chop

Combined all ingredients into a dough, then we proceed to the next step, which is to make a circular dough on a skewer.

Grilling Process

The process takes place when we first make a fire with charcoal. When the fireplace is ready,  place the dough in the sticks and cook in low to medium heat (In order not to burn the satay).

After Grilling

When the satay is fully cooked, the food was ready to serve. We then enjoyed this together with the elderly who were happy with the result.

We believe that there are still many youth who care about the issue of local culture. Thus, we want to be part of the youth who are enthusiastic in promoting our heritage. Through this activity, we hope that more youth will give more attention to preservation and at the same time invite all to connect with each other between generations, especially with the seniors.
